I think hipsters just like to hate on the bacon of the plebeians. Cut and cure do make a difference, but it's mostly the same fatty meat.

It's gotta be thick cut

If I'm at HT I'll get Smithfield thick cut. HT brand bacon is always on sale but it's not nearly as good. If I want to splurge I'll go to Fresh Market.

Cheap fatty bacon is best for wrapping venison tenderloin, scallops, etc. There's a place for every bacon, and every bacon has its place.

I pretty much agree that any bacon is good bacon. Unless it's undercooked. Crispy FTW! (ongoing argument in my family because bro and I love extra crispy and parents and LDToy prefer floppier)

Had some Kirkland bacon this morning and it was quite tasty.

I think the best I've ever tried was from a Zingerman's Bacon of the Month package. I think it was Broadbent's Dry-Cured from Kentucky.
