Who would've started at G if Cory had played C this past season?

And who is projected to start in Helms' place at G next season?

Josh T. Harris, Rocco Esposito, and Tyler Hayworth are the listed non-freshman guards on the Wake roster. Josh Harris started at RG all season. Antonio Ford started at Left Guard when Helms moved back to Center, except for the last game when Hayworth started.

And who is projected to start in Helms' place at G next season?

Hayworth is the obvious choice of the non-freshmen, or one of the redshirting freshmen O-linemen - Harry Warner, Taylor Chambers, Ryan Anderson, Justin Herron, Nick Luedeke, Patrick Osterhage. These guys are listed as "OL" whereas other freshmen are listed as tackles.

edited to add: Apparently the combination of Terry at Center and Helms at right guard was better than Helms at center and Hayworth at RG. However, once Will Smith was able to play tackle and let Antonio Ford move inside, Helms at C and Ford at RG was the better combination.

Yes, granted there were probably 4 freshman actually playing center in all of college football.

Freshman AA is relatively pointless. We had a player who shall remain nameless who was named freshman All-American at CB because he had 4 int as a freshman. 2 of those came in mop-up duty when FSU was up by about 75 against us. This guy was a good football player, but he never sniffed All-ACC or a pro contract.
 
Okoro played for the Redskins if that is who you were referring to
