DAT Cooking thread

Thanks for sharing this recipe - we made it this week. Used spaghetti squash instead of noodles..really, really good and easy recipe.

ooh, spaghetti squash would be good.
I've got a recipe for spaghetti squash and black bean tacos I'm wanting to make, but this might be a better use for the squash right now.
 
Can anyone recommend a good omelet pan? The Calphalon ones die an early death every time.

Made this peanut sauce last night, had it w/ rice noodles and broccoli. Huge thumbs up from the kids, and PM scraped the food processor bowl clean w/ a spatula because he "wanted to keep tasting it."

The yield is NOT 2 cups, but one recipe's worth was a perfect amount for 4 servings of our noodles+.

Ordered the Instant Pot Ultra 6-quart. on sale for $110 on Amazon right now. Been waiting for this one to go on sale. Was thinking of waiting until Prime Day, but wasn't sure if it would be marked down or not. Amazon usually has one or more of its Instant Pots on sale each week, give or take.

Got one on Prime day for $59! There are approximately 8 billion collections of recipes online. Anyone have favorites, or a site they like? I've generally been a serious eats guy. Looking for simple stuff for weeknight meals.
 
We're temporarily doing the apartment thing while we sell our house and hunt for a new one... Tiny kitchen forced an Instant Pot purchase and it's been great.

By far the best thing we've made from a quality vs. effort standpoint was a risotto with spinach/peas/parmesan and maybe some mushrooms. It took like zero prep and even from a food snob it was damn good. We sauteed some shrimp while it cooked, whole thing didn't take more than 20 minutes.

All of these were pretty big hits, risotto #1 and maybe the pot roast as #2 because the gravy was ridiculous, tasted like it'd been slow cooked for a day.
 
we did a chicken tikka masala in the instant pot a few weeks ago and it was excellent. Will try that risotto -- my wife enjoys what appears to me to be a very tedious experience of the regular risotto process, so she may be resistant.
