I like a lot of the more complicated Serious Eats options -- the tofu banh mi and the korean tofu tacos are a couple -- more fun with a couple helpers to divide and conquer

need to try the SE mapo tofu

pozoles -- where you put a ton of veggies in the pot with 50% of them tomatoes -- before immersion blending and adding hominy and ground pepitas is a fave

If you haven't tried doing Hasselback potatoes, it's a nice twist. You can look it up, but basically, you cut thin slices about 7/8ths of the way through the potato, drizzle with olive oil, and add salt, pepper, and whatever herbs you like, and bake at 450º for an hour.

Not really a full dish, but a great side.
 
Mango Tomatillo Salsa (serves 8)
6 tomatillos diced
3 mangos diced
2 red bell peppers diced
1 medium white onion diced
4 large or 6 medium sized jalapeño de-seeded and diced
1 (or 2) habenero minced
4 large cloves garlic minced
2 bunches cilantro chopped fine
1 teaspoon salt
1 cup lime juice
1 cup orange juice

To create the base, blend half of the dry ingredients + the habanero, spices and juices with a food processor

Add remaining chopped ingredients to base mixture & salt to taste

I love tomatillo salsas. I suggest taking half of them and blistering them under the broiler. Adds a nice smokey sort of element to any salsa.
