Good ones:

-Tommy Stinson covering You Can't Always Get What You Want
-Ryan Adams covering Wonderwall
-RHCP covering I Get Around
-RHCP covering Havana Affair
-Paul McCartney covering Foxy Lady (This was amazing)
-Foo Fighters covering Band On The Run
-My Morning Jacket covering Rocket Man
-Jimi Hendrix covering All Along the Watchtower (I like this better than Dylan's version)
-Jimi covering Like A Rolling Stone (Not as good but still impressive)

Bad ones:

Aerosmith covering Come Together
Seal covering Fly Like An Eagle
Most (if not all) bands that try to cover Grateful Dead
Limp Bizkit covering Behind Blue Eyes (Makes me want to puke)

I'm sure there are plenty more that are terrible that I'm forgetting and some great ones that I'm missing as well.

The first thread I ever posted on the old boards was comparing John Mayer's "Free Fallin" to the original, after the doofi had shown me the cover. Little did I know, they had gotten Mayer's version from a previous thread a couple of days before. I was ridiculed mercilessly.

 
Dream Theater has been known to show up at a club in NY on a random night and just cover another album. They've done it with Number of the Beast and Master of Puppets and many others. You can even buy the cover albums!
