I’d have to say Tom Colicchio is probably my least favorite chef in the way he does food. Shame because I’ve spent so much time watching top chef

if you're cooking the expensive and time consuming product, sack up and do what you want. the worst things that can happen are:
- the recipe is bad/botched and the whole bird is not great (grumbles on the day, fun story later). Definitely test run it ahead of time with a chicken or something.
- a couple people make a dumb comment about extra flavors
- everyone revolts and you're off the hosting hook
- it's good and now everyone thinks you're a wizard and you have to do it every year
fuck it man, just do what you want. it's one thanksgiving. i've run into frequently, not just at Tgiving but any tine, because my dad likes almost no flavors except salt. Eventually i was like "why is one person dictating everyone else's meal all the time?"
