What’s the best cheese (besides American) for grilled cheese? I’ve been itchin for a grilled cheese & tomato soup so might do that sometime this week.
 
With the holidays coming up, a good baked brie is where it's at. Always a crowd pleaser.

I've always been a fan of using Gruyere.
 
Does anyone put a little mayo inside of their grilled cheese? I had never heard of it until a few years ago, but I'm a convert now. Butter on the outside of the bread, of course.

Big Monterrey Jack fan for sandwich melting. Gouda & Munster solid too in the past. Make sure you do the light layer of mayo trick on the outside of the bread for perfect pan toasting.

Easy Tiger in Austin has a killer grilled cheese. Was sitting at the bar one night eating one and the bartender told me their secret but now I am blanking on it completely and I am upset.
 
I don’t do Mayo.

It’s a mental block for me. But you can put an aioli or ranch on my sandwich 10/10 and I’m going to enjoy it.
 
Mayo is delicious. It’s fine if people don’t like the taste, but the whole getting weirded out by it thing is odd to me.

I can see the store bought jiggly mayo grossing people out. But once you spread it, that goes away and it's all good. But homemade mayo or any sort of aioli/sauce? That's a must on almost any sandwich and typically a top tier dipping option.
 
Parmesan cheese sucks. The real stuff, Parmigiano Reggiano, is great

Homemade mayo is where it's at. And you can make a fuck ton of it for pennies and it beats the hell out of anything store bought.
 
Gotta throw some cured meats down there to really make it elite

the key ingredient being honey. Cheese/meat/honey combo is the winner with the baguette. I love going to a specialty cheese shop, trying a handful of different types, and grabbing 3-5 cheeses, the meats and grabbing a baguette

There’s a place in Charleston that does whipped feta with a spicy fermented honey on stop & it’s killer.
