College Football All Star games

This has always confused me...

These all star games normally pit North vs South or East vs West but I always see Florida players on the North or NC, Georgia on the West.

Am i missing something or are these just generic team names?
 
The other thing is when you think about it, the world is round and so something that is east is also west and something that is west is also east. Like, China is east of my house, but it is also west. And also maybe north or south if you went up or down.
