There used to a be a French style Japanese restaurant in my neighborhood run by a chef who trained under Iron Chef France from the original Iron Chef. It closed almost 10 years ago and I still think about it all the time. Family owned and run and they had these wonder $9.95 lunch specials.

Hahaha. You can come sit in with my sophomores. We started that today. Enjoy that trench warfare bro. That book is just so damn beautifully written. I’ve read it and taught it probably 50 times now, and I still get taken aback by some of the imagery and his internal monologue. Let me know what you think.

I have. The wine and cheese is stellar. I feel like the rest of their cuisine is more about applying some really fancy techniques to elevate pedestrian ingredients.

I like the simplicity of southern French cuisine. Fresh vegetables, seafood, a shitload of butter on everything.

Got a much needed bro day coming up tomorrow with some peeps. Gonna get the kayaks out and run Wilson Creek Gorge tomorrow morning, and then play a round of disc golf in the afternoon. Looking forward to it.

I think this is what's lost on folks like BBD. Yes, French cooking isn't all about sexy ingredients. It's just "this tastes good." Maillard is named after Louis Camille Maillard for a fucking reason.

Bro, I'm looking at this tough mudder thing. Fuuuuuuuck 10 miles. That's the hang up for me. If it were swimming or biking, I might be able to hang. But running 10 miles? Man, fuck that sooooo hard.
