I loved the Dale Earnhardt Jr. Jr. cover of Summer Babe from a few years ago. http://www.avclub.com/video/dale-earnhardt-jr-jr-covers-summer-babe-by-pavemen-58512

And Swell Season's cover of Two Headed Boy stood out for me a while back http://www.avclub.com/video/the-swell-season-covers-neutral-milk-hotel-38877 but now that I've seen NMH perform it them selves twice this version has lost is luster a bit. Still, Glen Hansard has a great voice.
 
It helps a lot if either the band doing the covering or the song they're covering are great.

Top comment on that Frontier Ruckus video: "You can tell these guys like the neutral milk hotel." They sound to me like NMH if Conor Oberst was their lead singer.
