I've been going sous vide, cast iron skillet plus searzall blowtorch lately. Results have been awesome and the consistency/predictability is hard to get away from.

We have cooked a lot of Indian food over the years, but the one dish we've never been able to get right is butter chicken. We stopped trying to make it for years since our go to delivery spot makes a ridiculously good butter chicken that we have never even come close to. So while I'm not a ride or die Serious Eats acolyte, we made this recipe over the weekend and it is absolutely spectacular. Close to the best butter chicken I've ever had.
